INGREDIENTS
1.5 lb Chicken Breast (diced)
6 oz gf spaghetti pasta (@eatbanza )
4 Roma Tomatoes (diced)
1/4 cup of basil (more for garnish)
2 garlic cloves
3 cups Spinach
1 Tbsp Balsamic Vinegar
2 Tbsp Olive Oil (@getgraza )
Italian seasoning
Optional Add Ons: Balsamic Glaze, Parmesan

INSTRUCTIONS
In a medium bowl, combine the diced roma tomatoes, fresh basil, minced garlic, balsamic vinegar, and 1 tablespoon of olive oil.
Gently stir to combine, letting the flavors meld together. Set aside in the fridge to help the flavors marinate.
Bring a large pot of salted water to a boil, then add pasta and cook according to the package instructions. Drain and set aside.
Heat remaining 1 tablespoon of olive oil in a large skillet over medium heat. Season the cubed chicken with Italian seasoning, salt, and pepper, then add it to the skillet.
Sauté the chicken for about 7-8 minutes, or until it turns golden brown and is fully cooked. Remove the chicken and set it aside.
Add the cooked pasta to the same skillet then, add spinach and bruschetta mixture. Cook till spinach has wilted down.
Add the cooked chicken to the skillet. Toss all ingredients together until they’re evenly combined and everything is warmed through.
Garnish with balsamic glaze, fresh basil leaves, and/or parmesan.
Serve warm and enjoy!

2 fillets Chilean Seabass 6 ounces each, 170 grams
1 tbsp olive oil 30ml @getgraza
2 tbsp dairy free butter @miyokoscreamery
0.5 lemon juiced and zested
1 cloves garlic minced
0.25 tsp red chili flakes
Salt and pepper to taste
For garnish: fresh parsley chopped & lemon slices

INSTRUCTIONS
Pat the seabass fillets dry with paper towels. season both sides with salt and pepper to taste.
In a large, non-stick skillet, heat the olive oil over medium-high heat.
Carefully place the seabass fillets in the skillet.
Cook for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
Remove the seabass from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the minced garlic and red chili flakes, cooking for 1 minute until fragrant.
Pour in the lemon juice and zest, stirring to combine all the flavors. Allow the sauce to simmer for a couple of minutes to slightly reduce.
Return the seabass to the skillet and spoon the lemon butter sauce over the fillets. Let them cook for an additional 1-2 minutes in the sauce to soak up the flavors.
Transfer the seabass to plates, spoon extra sauce over the top, and garnish with chopped parsley and lemon slices.

INGREDIENTS
3 ripe bananas (mashed) + 1 banana for the top
1 large egg (room temperature)
1/4 cup avocado or olive oil
1/4 cup applesauce (unsweetened)
1/2 cup coconut sugar
1 teaspoon vanilla extract
1 1/2 cups gluten-free all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Optional add ins: 1/2 cup dairy-free chocolate chips, chopped nuts, or raisins

INSTRUCTIONS
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
Add oil, applesauce and sugar in a large mixing bowl. Mix until well combined.
In a seperate mixing bowl, mash the ripe bananas with a fork until smooth.
Add eggs, vanilla extract, mashed bananas into the large mixing bowl. Whisk until well combined.
Add the gluten-free flour, baking soda, cinnamon, and nutmeg. Gently fold everything together until just combined. Be careful not to overmix.
If using chocolate chips, nuts, or other add-ins, gently fold them into the batter.
Pour half the batter into the prepared loaf pan and spread it evenly. Sprinkle some cinnamon coconut sugar across the batter. Pour the other half of the batter in the loaf pan and spread it evenly.
Slice your extra banana in half and place it on top of the batter. Top off with a little extra cinnamon coconut sugar.
Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack
Slice and enjoy!

INSTRUCTIONS
Preheat your oven to 450F
Evenly arrange your gnocchi, sausage and veggies on a parchment lined baking sheet
Drizzle the olive oil over the prepared pan making sure every piece is evenly coated
Garnish with fresh rosemary
Place sheet pan in the oven for 10 mins. Take the pan out and flip the gnocchi, veggies, and sausage. Place sheet back in the oven for 10-12 mins or until everything looks roasted.
Finish off your dish with fresh herbs, cheese, and or balsamic glaze.

2 tsp baking powder
2 tsp baking soda
1 tsp salt
½ cup coconut sugar
⅓ cup unsweetened apple sauce
¼ cup of Olive Oil
4 large eggs
1 tosp vanilla extract
1 ¼ cup almond milk, at room temperature

For the Cinnamon Pecan Streusel/cinnamon swirl
1 cup old fashioned oats
½ cup coconut sugar + 1½ tbsp ground cinnamon (divided)
1 cup chopped pecans
½ cup melted butter (@miyokoscreamery unsalted)

INSTRUCTIONS
Preheat your oven to 350°F.
Grease a 9-inch cake pan and set aside.
Add the gluten-free flour, baking powder, baking soda, and salt to a small mixing bowl.
Gently stir to combine and then set aside.
Add the coconut sugar, olive oil, and apple sauce to a large mixing bowl. Mix until combined.
Next add your non dairy milk of choice, eggs, vanilla extract, until smooth using a hand mixer or stand mixer.
Add the dry ingredients slowly to the wet mixture and mix with the hand mixer until no lumps remain and is fully combined.
In a small mixing bowl make the cinnamon swirl by adding the cinnamon and 1/2 cup of coconut sugar and stir to combine.
Pour (HALF) of the cake batter into the prepared cake pan.
Sprinkle (HALF) of the cinnamon sugar over the first layer of batter.
Spread the remaining batter over the cinnamon sugar. Make sure everything is distributed evenly with a spatula.
For the streusel topping, add the oats and dairy-free butter to the remaining cinnamon sugar and mix until fully combined.
Sprinkle the streusel over the top of the cake Bake for 40 to 45 minutes until a toothpick inserted comes out clean.
Cool on a wire rack before serving

1 egg

For the toppings:
1/3 cup peanuts
1/2 cup melted dark chocolate (I use @hukitchen )

INSTRUCTIONS:
Preheat the oven to 350°.
Cream together the butter, granulated sugar and brown sugar.
Add in the eggs, vanilla and peanut butter. Mix until well combined.
Add the flour, oats, salt and baking powder to the bowl and mix until combined.
Scoop the dough & roll the cookie dough into a ball.
Slightly flatten the cookie so the cookie looks like a hockey puck. Add crushed peanuts on top.
Bake at 350° for 17-20 minutes.
Once they have cooled for 15 minutes, drizzle dark chocolate on top
Cool until chocolate drizzle hardens.
Enjoy!

For the Bowl:
6-ounce salmon fillet
1/2 cup brown rice
1 cup of broccoli

1/4 cup red cabbage

1 avocado, halved

sesame seeds

For the marinade:
2 Tbsp Sriratcha
2 Tbsp Honey

INSTRUCTIONS
Slice your salmon fillets into cubes. Place cubbed salmon into a bag or bowl.
In a bowl mix together the honey and sirratcha sauce. Pour marinade mixture on top of salmon. Mix till salmon is covered. Let it marinade for 15-20 mins.
While salmon is marinating, preheat your oven to 400F.
Cut up broccolli and red bell pepper. Toss into a bowl and drizzle it with olive oil.
Move veggies onto a foil or parchment lined pan and cook for about 10 mins or until you can smell the broccoli.
Once salmon is marinaded. Preheat air fryer to 400F. Place cubes in a liner or in tin foil. Cook for about 10-12mins with flipping the salmon halfway through.
Assemble your bowl with the rice, broccoli, peppers, carrots and cabbage. Then add your salmon and avocado slices. Finish with a sprinkle of sesame seeds.

Here’s the recipe for this delicious Whole Wheat Dutch Oven Artisan Bread!

Ingredients
3 cups whole wheat flour
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon instant yeast
1 tablespoon apple cider vinegar
2 tablespoons honey
1 ½ cups water plus 1 or 2 tablespoons

Instructions
PREPARING:
Mix together in a large bowl the whole wheat flour, all-purpose flour, salt, and yeast. Stir to combine.
Measure out the water and heat in the microwave until it’s between 105 and 110°F/45°C. Stir in the maple syrup and vinegar. Add this mixture to the flour mixture and stir to incorporate. Use your hands if necessary to incorporate all the flour. The dough will be slightly sticky.

RISING:
Rise #1: Cover the bowl with plastic wrap. Set aside for 12 to 24 hours (overnight works, but so does setting it aside for the day to bake at night)
Rise #2: After the step above is done, place the dough on a lightly floured surface, and mold it into a round loaf. Place on a large piece of parchment paper in a bowl, cover with plastic wrap, and set aside for an hour or so to let the dough rise.

BAKING:
About 15 minutes before you’re ready to bake, place a dutch oven in a cold oven and turn the heat to 425°F/220°C.
Once the oven is heated, lightly score the top of the loaf and then grab the parchment paper and carefully place the loaf in the hot dutch oven (be careful because it’s very hot).
Cover and bake for 50 minutes, then remove the lid and bake for another 15 minutes or so until the top is golden brown.

2 cod fillets

1/2 onion, finely chopped
2 cloves garlic, minced
1 cups cherry tomatoes, halved
1/2 can (14.5 oz) diced tomatoes
1/4 cup fresh basil leaves, chopped
2 Tbsp cup dry white wine
Salt and pepper to taste
Optional: finishing balsamic glaze drizzle

INSTRUCTIONS
Season the cod fillets with salt and pepper.
Heat 1/2 tablespoon of olive oil in a large skillet over medium heat.
Add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the remaining 1/2 tablespoon of olive oil. Add the onion and garlic, and saute for 2-3 minutes until softened.
Add the cherry tomatoes and cook for another 3 minutes until they start to break down.
Stir in the diced tomatoes, white wine, and half of the basil. Simmer for 10 minutes to allow the flavors to combine.
Return the cod fillets to the skillet and spoon the sauce over the top. Simmer for another 2-3 minutes to heat the fish through.
Serve the cod fillets with the tomato basil sauce spooned over the top and garnished with basil
Pairs well with rice or orzo

Ingredients:
1.5 cups peanut butter (can substitute for any butters)
0.25 cup maple syrup
1.5 cups of old fashioned oats (blended)
1 cup dark chocolate
Flaky sea salt (optional, for topping)

Instructions:
Combine maple syrup and peanut butter in a medium size bowl. Microwave for 45-60 seconds or until the peanut butter has softened more mixing.
Blend oats in a medium to large blender until they have turned into a flour like consistency
Combine blended oats with peanut butter/maple syrup mix
Place the peanut butter mixture into a silicon cupcake pan (cupcake liners will work as well)
Melt your chocolate in the microwave for 1 minute or until completely melted. Make sure to check on it in 15 second integers to avoid burning.
Pour the chocolate evenly into each up. Optional: Top with coarse sea salt
Place peanut butter cups in the fridge/freezer for 60 minutes or more until the chocolate has hardened
Keep refrigerated to avoid spoilage

½ tsp nutmeg
8oz pumpkin puree (not pumpkin pie filling)
¾ cup coconut sugar
½ cup unsweetened apple sauce
2 tbsp of Extra Virgin Olive Oil (Can substitute with Avocado or Coconut)
2 large eggs
1 tsp vanilla extract

Instructions:
Preheat oven to 350 degrees F. Lightly grease a 8.5 x 4.5-inch loaf pan
In a medium bowl whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
In a large bowl, whisk together the applesauce, olive oil, and sugar until combined. Then add the eggs, pumpkin, water and vanilla and whisk until thoroughly combined and smooth. Add the dry ingredients gradually. Mix gently until combined. Using a large spoon or spatula, stir fold in in the nuts (optional).
Pour the batter in your greased or parchment lined pan. Bake for 50 to 60 minutes, or until a thin knife inserted into the center comes out clean.
Remove the bread from the oven and place the pan on a cooling rack. After 10-15 minutes remove the bread from the pan.
