Instructions

  1. Preheat oven to 350°.
  2. Cream together the butter, granulated sugar and brown sugar.
  3. Add the egg and vanilla. Mix until light in color and creamy.
  4. Add in the dry ingredients (flour, baking soda, baking powder and salt), mix into the dough. Mix until completely combined.
  5. Fold in the peppermint bark and pretzels and any other mix ins of your choice.
  6. Roll into a ball and arrange 6 onto each cookie sheet. Add extra peppermint bark to the top if desired.
  7. Bake for 12-15 minutes, until the cookies are turning golden brown..

Note

Additional Mix Ins: semi-sweet chocolate chips, toffee bits, dried cranberries, white chocolate chunks, peppermint, red and green sprinkles, chopped pecans or walnuts (I recommend only adding 3-4 mix ins)

Make this Dairy Free! Depending on what ingredients you add into these cookies, you can make them dairy free. My favorite brand of dairy free white chocolate is from evolved.
